We had banana cream pie instead of cake, for a little change of pace.
Oh, and this is one of my new favorite things to make. Chicken pop-overs with soup (cream of broccoli being by favorite). I used Drue's roll recipe which is really good and you can make anything with it. This time I halved the recipe and make pop-overs and cinnamon rolls. This is the roll recipe, courtesy of Drue Harris.
2 cups hot tap water
1 cup margarine (melted) or butter
2/3 cup sugar3 eggs
1 tsp. salt
Mix together.
add 2 Tbsp. yeast. Mix and let stand until bubbles, about 5 minutes.
Add 1 tsp. baking powder
Add 6-7 cups flour. I usually add 3 or 4 cups and mix. Then add 2 more and mix, then add the last cup while
I knead it into the dough. I stop adding flour when it isn't sticky anymore.
Put it in a greased bowl and let raise until it doubles, depending on how hot it is 1 to 2 hours.
Split into 4 pieces, roll out into a circle and cut into 12 slices (or 16 if you want smaller rolls). Roll into rolls and let raise 15 min. or longer.
Bake at 400 for 12-15 minutes.
Then to make the pop-overs I still roll out the dough and cut it as if I were making crescent rolls. I make a mixture of shredded chicken, about 4 oz. cream cheese, 3 T. butter, salt, pepper, some onion powder and then whatever else I have like olives, mushrooms, almonds, etc. Place some of the mixture on the crescent roll, bring the three points together, pinch edges and roll it into a ball. Dip in melted butter and then in some bread crumbs and bake at 400 for 15-17 minutes.
That's kind of an unofficial recipe, but they are so yummy. You can pretty much do anything inside the rolls you want. I'm going to try some other things like shredded beef with a red sauce. You could even do a veggie mixture if you don't want meat.
