Happy Birthday Jeff !!

Yesterday was Jeff's birthday and despite our busy Sunday schedule we had a fun day.  The older I get, the more I discover that Sunday's are not really a day of rest.  Between regular church meetings, other meetings for Jeff, home teaching, etc. it was a really busy birthday.  We finally had a yummy dinner, dessert and presents about 8pm, but at least we did it!  I'm so glad Jeff is my husband!  He is always thinking about what is best for us and the kids love to do just about anything with him.  Even chores are more fun when dad is participating.  We feel very blessed to have the best dad in the world!!

We had banana cream pie instead of cake, for a little change of pace.




Oh, and this is one of my new favorite things to make.  Chicken pop-overs with soup (cream of broccoli being by favorite).  I used Drue's roll recipe which is really good and you can make anything with it.  This time I halved the recipe and make pop-overs and cinnamon rolls.  This is the roll recipe, courtesy of Drue Harris.

2 cups hot tap water
1 cup margarine (melted) or butter
2/3 cup sugar
3 eggs
1 tsp. salt
Mix together.
add 2 Tbsp. yeast. Mix and let stand until bubbles, about 5 minutes.
Add 1 tsp. baking powder
Add 6-7 cups flour. I usually add 3 or 4 cups and mix. Then add 2 more and mix, then add the last cup while
I knead it into the dough. I stop adding flour when it isn't sticky anymore.
Put it in a greased bowl and let raise until it doubles, depending on how hot it is 1 to 2 hours.
Split into 4 pieces, roll out into a circle and cut into 12 slices (or 16 if you want smaller rolls). Roll into rolls and let raise 15 min. or longer.
Bake at 400 for 12-15 minutes.

Then to make the pop-overs I still roll out the dough and cut it as if I were making crescent rolls.  I make a mixture of shredded chicken, about 4 oz. cream cheese, 3 T. butter, salt, pepper, some onion powder and then whatever else I have like olives, mushrooms, almonds, etc.  Place some of the mixture on the crescent roll, bring the three points together, pinch edges and roll it into a ball.  Dip in melted butter and then in some bread crumbs and bake at 400 for 15-17 minutes. 

That's kind of an unofficial recipe, but they are so yummy.  You can pretty much do anything inside the rolls you want.  I'm going to try some other things like shredded beef with a red sauce.  You could even do a veggie mixture if you don't want meat.

Funny little girl

The other day after school all the kids were playing like they always do.  These two little girls, probably 4 and 7 came up to me and said how cute Annie and Jacob were. 
Annie, of course, was shy and wouldn't talk to them but they kept saying things like:  
"She's so adorable",
"I like the baby",
"Look, he's holding my hand.  Why does he do that?"
"I just love babies." 
After a few minutes of talking to them the younger girl suggested they go play on the slide.  The older girl said, "Okay, let's go, this baby is boring anyway."   It was so funny I almost laughed out loud.  :)

Spring Break...Long story...short

Christopher had last week off school and it was so nice to have him home.  He really likes school, but some days I just feel bad that we do things without him.  So I made a fun little chart with pockets and each day they would pick out a fun activity.  This could potentially be a long post, so I'll try to make it as short as possible.  Here we go...

Day 1- Easter egg hunt with ward friends.


Day 2- Family weekend trip upstate for conference.





Day 3 - Easter and more conference.  Wasn't conference amazing.  Despite the difficulty of watching conference with small children, we really enjoyed it.  I think my favorite talks were Sister Beck and Elder Bednar.  So many of the talks were on families, I loved it!



Day 4- Go to the library (we do this every week anyway, but Christopher doesn't always get to go).

Day 5- Go on a nature hike.  I found this fun place called Trailside Nature Center in Mountainside NJ.  Really cool...check it out if you haven't.



Day 6- Go to the zoo.  We ventured to the Bronx Zoo on an almost 90 degree day.  What was I thinking!!!  Actually, it was really fun and it gave us an excuse to buy some ice cream.  Jacob and Christopher did wonderfully...little too much whining from Michael and Annie toward the end, but we survived.  Favorite animals: bears, sea lions and leopard.



Christopher also had his first day of soccer practice on this day...so it was a really long day.  I think I have been more excited about this than he was...and he was pretty excited.  Turns out he has two friends on his team; Howard from his Kind class and Kayden from primary.  He has a lady coach and she was super nice.  He did pretty good for the first day and for not really playing soccer much before.


Day 7- Go to Mad Science presentation at the library.  I forgot my camera, but it was a fun class.  Basically it was all about air....who knew all the amazing things that plain ole'  air can do!  We also enjoyed playing in the yard.

Day 8- Make a fun craft.  Because of  a leaky water heater and having to deal with that, I didn't plan very well for this and we ended up just making playdough.  But they loved it.


Christopher also lost his second tooth this day.  It was pretty loose to begin with, but thanks to a little rough-housing, Michael's head delivered the final blow and knocked it out. :)

Christopher is back to school now and we thought it might be hard for him to go back, but he had no problem.  It was a fun Spring Break.

Jacob - 6 months old

I can't believe Jacob is 6 months old already.  The baby months seem to go faster and faster with each baby.  Jacob is such a happy little guy and smiles all the time.  He loves to eat and I already started him on cereal a few weeks ago.  He's getting his two bottom teeth and it's making him a little crankier than usual, but he's still a super easy baby.  His only shortcoming (if you could call it that) is that he's not a good sleeper at night.  He wants mommy all the time and I think I indulged him to many times and let him sleep with me so now he's not content to be in his crib for very long.  But I can't stand to listen to him cry for very long, so he usually wins out. :) He hasn't had to 6 month doctor appointment yet so I'm not sure how much he weighs, but I bet it's around 17 pounds.  His brothers and sister love him to pieces and want to hold and hug him all the time.  Happy half birthday, little snuggle bug!!

We found him asleep holding his foot.  Isn't that so funny!
